Pseudocereal


Any non-grass that is used in a manner similar to cereals, which are grasses. The main difference between this type of non-grass crop and non-pseudocereals is that the former can (and are) ground into flour and used in the same exact manner as cereals.

Common pseudocereals include:

  • Acorn
  • Buckwheat
  • Quinoa
  • Amaranth
  • Canihua
  • Chia

Typically, pseudocereals are high in protein and have very little gluten. Botanically speaking, they are assigned to the dicotyledonae category. Typically, the seeds of pseudocereals are smaller than those of cereals. They also are capable of growing in soils of poor quality. After that, it gets difficult to make generalizations of the category itself.
